1. Instant mashed potato flakes - ⅔ cup
2. Complete dry pancake mix - ⅓ cup
3. Chopped onion - ½ cup
4. Shredded Cheddar cheese - 1 cup
5. Skim milk - 1 cup
6. Egg, beaten - 1
7. Extra-virgin olive oil - 1 tablespoon
8. Garlic powder - ½ teaspoon
9. Salt and pepper to taste - 1 pinch
10. Cayenne pepper - 1 pinch

How to cook deliciously - Mountain Mama's Potato Pancakes

1. Stage

Stir together potato flakes, pancake mix, onion, Cheddar cheese, milk, egg, olive oil, garlic powder, salt, pepper, and cayenne pepper in a bowl until well combined.

2. Stage

Grease a griddle or large skillet and place over medium heat. Drop pancakes, 1/4 cup at a time, onto the hot griddle and cook until edges look dry and one bubble appears in the center, about 3 minutes. Flip pancakes and cook until browned on the other side, about 3 more minutes.
