Ingredients for - Portuguese Bean Soup I

1. Chorizo sausage, chopped - ½ pound
2. Olive oil - ¼ cup
3. Carrots, chopped - 2
4. Chopped onion - 1 cup
5. Celery, chopped - 5 stalks
6. Tomatoes, chopped - 5
7. Potatoes, peeled and chopped - 3 small
8. Chicken broth - 3 quarts
9. Cayenne pepper - 1 ½ tablespoons
10. Kidney beans, drained - 1 (15 ounce) can
11. Tomato paste - ½ cup
12. Salt and pepper to taste - ½ cup

How to cook deliciously - Portuguese Bean Soup I

1. Stage

Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

2. Stage

In a stockpot over medium-high heat, heat oil and saute carrots, onion and celery. Add tomatoes, potatoes, kidney beans and chicken broth. Bring to a boil and stir in cayenne pepper and tomato paste. Reduce heat and simmer for 20 minutes. Add sausage and season with salt and pepper to taste. Serve hot.
