1. Sweet potatoes, cut into cubes 4 large
2. Cooking spray 4 large
3. Salt ½ teaspoon
4. Ground black pepper ½ teaspoon
5. Lemon, juiced 1
6. Olive oil 3 tablespoons
7. Brown sugar 2 tablespoons
8. Sea salt 1 teaspoon
9. Ground black pepper ½ teaspoon
10. Mangoes - peeled, seeded, and chopped 2 large
11. Minced onion ¾ cup
12. Chopped fresh cilantro ¾ cup
13. Avocado - peeled, pitted, and chopped 1 large
14. Green onion, chopped 1
15. Habanero pepper, seeded and minced ½

How to cook deliciously - Roasted Sweet Potato Mango Salad

1 . Stage

Preheat oven to 400 degrees F (200 degrees C).

2 . Stage

Spread sweet potatoes onto a baking sheet; spray with cooking spray and season with 1/2 teaspoon salt and 1/2 teaspoon black pepper.

Roast potatoes in the preheated oven until soft, about 20 minutes. Transfer potatoes to a plate and refrigerate until cooled completely.

Whisk lemon juice, olive oil, brown sugar, sea salt, and 1/2 teaspoon black pepper together in a bowl; let rest for at least 5 minutes.
