1. Potatoes, peeled and cubed 7 large
2. Frozen chopped spinach, thawed and drained 1 (10 ounce) package
3. Sour cream 1 cup
4. Butter ¼ cup
5. Chopped green onions 2 tablespoons
6. Salt 2 teaspoons
7. Black pepper ¼ teaspoon
8. Shredded Cheddar cheese 1 cup

1 . Stage

Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.

Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.

Combine mashed potatoes, spinach, sour cream, butter, green onions, salt, and pepper in a large bowl. Spoon into the prepared dish.
