Ingredients for - Quick and Easy Black Bean Soup

1. Bacon, chopped - 6 slices
2. Onion, diced - 1 large
3. Garlic, minced - 3 cloves
4. Chicken broth - 2 cups
5. Pinch of dried oregano - 2 cups
6. Pinch of cayenne pepper - 2 cups
7. Ground cumin - ½ teaspoon
8. Salt to taste - ½ teaspoon
9. Black beans, rinsed and drained - 2 (14.5 ounce) cans
10. Water - 14 ½ fluid ounces
11. Ground black pepper - ½ teaspoon
12. Minced green onion - ⅓ cup
13. Sambal paste (or minced red chiles) - 2 teaspoons
14. Juice of 1 lime - 2 teaspoons
15. Chopped green onion - 2 tablespoons
16. Sour cream - 3 tablespoons

How to cook deliciously - Quick and Easy Black Bean Soup

1. Stage

Place bacon in a cold pot. Turn heat to medium, cook and stir until the bacon is cooked but not crisp.

2. Stage

Stir in onion; cook and stir for 5 minutes, until the onion turns translucent and golden.

3. Stage

Stir in garlic; cook for 2-3 minutes. Add chicken stock, turn heat to medium-high. Stir in oregano, cayenne and salt. Add black beans and water. Return to a simmer.

Simmer on medium-low, stirring occasionally, for 20-30 minutes. While it's cooking, mash about half the beans to thicken the soup.

Stir in black pepper and cumin. Add salt to taste.

Make the relish by stirring together minced green onion, sambal paste, and lime juice.

Serve garnished with relish, chopped green onions, and sour cream.
