3. Zucchini, cut into 1-inch pieces - 1
4. Fresh mushrooms, cleaned and halved - 4 ounces
5. Sweet onion, cut into 1-inch wedges - ½
6. Extra-virgin olive oil - 1 tablespoon
7. Salt and pepper to taste - 1 tablespoon
