1. Stage
Mix the salt and sugar in a 2 to 1 ratio (2 parts salt and 1 part sugar). Cut the zest off the orange and chop it into small pieces.

Knead the orange zest with salt and sugar and add a little water to form a mushy mixture.
3. Stage
Place our orange mixture under the fish and on top of the fish.

I wrap the coated fish in parchment. Then I put it in the cold.
5. Stage
Salt the fish for 12 hours (to get saltier fish, increase the time). Then peel the mixture off the fish, cut into slices and put on a plate. Bon appetit, everyone!
