1. 20 oz. Soba noodles -
2. 8 Persian cucumbers -
3. 1/2 c. Edamame -
4. 1/2 c. Red cabbage -
5. 1/4 c. Scallions, chopped -
6. 1/8 c. Cilantro, chopped -
7. 2 tbsp. fish sauce -
8. 2 tbsp. lime juice -
9. 1 tsp. ginger, grated -
10. 1 tbsp. rice wine vinegar -
11. 1/2 tbsp. sugar -
12. 1 Garlic clovers, grated -
13. 1 tbsp. sesame oil -
14. 2 tbsp. Seed oil -
15. 1 tbsp. sesame seeds -
16. 1 Chilies -

How to cook deliciously - Serena Goh's Cold Soba Noodle Salad

1. Stage

Make the dressing by combining fish sauce, lime juice, grated ginger, rice wine vinegar, sugar and garlic.  Then whisk in sesame oil or seed oil.   Then stir in sesame seeds, Birdseye chilies and scallions. Set aside.

2. Stage

Using a mandolin, shred cabbage and julienne cucumbers. Set aside.

3. Stage

Prepare soba according to package instructions, drain and immediately drop into an ice water bath. Let cool to room temperature.

In a large bowl, combine noodles, cucumbers, edamame, red cabbage, and toss together with dressing

Plate on a long platter and add cilantro, extra scallions and sesame seeds.
