Ingredients for - Slow Cooker Latin Chicken

1. Olive oil - 1 tablespoon
2. Skinless chicken thighs - 3 pounds
3. Salt and ground black pepper to taste - 3 pounds
4. Fresh cilantro, coarsely chopped, divided - ½ cup
5. Black beans, rinsed and drained - 2 (15.5 ounce) cans
6. Sweet potatoes, cut into chunks - 2 large
7. Red bell pepper, cut into strips - 1
8. Hot salsa - 1 cup
9. Chicken broth - ½ cup
10. Garlic, chopped - 3 large cloves
11. Ground cumin - 2 teaspoons
12. Ground allspice - ½ teaspoon
13. Lime wedges, for garnish - ½ teaspoon

How to cook deliciously - Slow Cooker Latin Chicken

1. Stage

Heat olive oil in a large skillet. Season chicken with salt and pepper; sprinkle 1/4 cup cilantro over chicken thighs. Cook chicken in hot oil until browned, 3 to 5 minutes per side. Arrange chicken in the bottom of a slow cooker.

2. Stage

Place black beans, sweet potatoes, and red bell pepper on top of chicken. Mix together salsa, chicken broth, 1/4 cup cilantro, garlic, cumin, and allspice in a bowl; pour into the slow cooker.

Cook on Low for 4 hours. Garnish with lime wedges to serve.
