1. Chicken broth - 2 cups
2. Quinoa - 1 cup
3. Vegetable oil, or as needed - 2 teaspoons
4. Onion, chopped - ½
5. Garlic, or to taste, minced - 2 cloves
6. Ground chicken - 1 ½ pounds
7. Diced tomatoes with green chile peppers (such as RO*TEL®) - 1 ½ (10 ounce) cans
