Ingredients for - Slow-Roasted Pesto Salmon

1. 2-3 lb. salmon -
2. Kosher salt -
3. Freshly ground black pepper -
4. 1 (6.5-oz.) container pesto -
5. 2 c. cherry tomatoes -
6. 1 tbsp. extra-virgin olive oil -
7. Red pepper flakes -
8. Lemon wedges, for serving -

How to cook deliciously - Slow-Roasted Pesto Salmon

1. Stage

Preheat oven to 350° and line a large baking sheet with foil. Place salmon in the middle, skin side down, and season with salt and pepper. Spread pesto all over top. 

2. Stage

Place tomatoes in a medium bowl and drizzle with oil. Season with salt, pepper, and red pepper flakes and toss to coat. Spread around salmon on baking sheet. 

3. Stage

Bake until salmon is fork tender and internal temperature reaches 140°, about 40 minutes. Serve with lemon wedges.
