2. 1 tbsp. vegetable oil -
3. 1 in. fresh ginger, peeled and chopped -
4. 1 tsp. crushed red pepper flakes -
5. 2 orange bell peppers, sliced -
6. 1 red onion, sliced -
7. 1 head baby bok choy, sliced -
8. 1 summer squash, sliced into rounds -
9. 3 tbsp. low-sodium soy sauce -
10. Kosher salt -
11. Black pepper -
12. 1 lb. medium shrimp, peeled and deveined -

How to cook deliciously - Shrimp Stir-Fry with Peppers and Summer Squash

1. Stage

Combine rice, 2 cups water, and a pinch of salt in a saucepan and bring to a boil. Reduce heat and simmer until tender, about 20 minutes.

2. Stage

Heat oil in a large skillet over medium-high heat. Add ginger, peppers, onion, bok choy, squash, and soy sauce and season with salt and pepper. Cook until almost-tender, 6 minutes, then add shrimp and cook until opaque, 4 minutes more. Season with salt and pepper.
