Ingredients for - Smashed Potatoes

1. Small yellow-fleshed potatoes - 1 ½ pounds
2. Olive oil - ¼ cup
3. Balsamic Vinegar - 2 tablespoons
4. Butter at room temperature - 1 teaspoon
5. Garlic, minced - 3 cloves
6. Dried rosemary - 1 teaspoon
7. Dried sage - ½ teaspoon
8. Ground thyme - ½ teaspoon
9. Dried savory - ½ teaspoon
10. Sea salt - ½ teaspoon
11. Ground black pepper - ½ teaspoon

How to cook deliciously - Smashed Potatoes

1. Stage

Place potatoes in a saucepan. Fill with water to cover potatoes and bring to a boil. Reduce heat to a simmer and cook potatoes until tender but not mushy, about 20 minutes. Drain and allow potatoes to cool.

While potatoes are cooling, mix olive oil, balsamic vinegar, butter, garlic, rosemary, sage, thyme, savory, salt, and pepper in a bowl. Stir with a fork to combine well.

Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.

Place cooled potatoes in a single layer on the prepared baking sheet. Use a clean dish towel to lightly press down on potatoes to smash them. Spoon the oil-herb mixture over each potato.

Bake in the preheated oven until crispy, about 25 minutes. Let cool slightly before serving.
