Ingredients for - Spiced Quinoa

1. Olive oil 1 tablespoon
2. Onion, chopped 1 small
3. Garlic, minced 1 clove
4. Chicken stock 1 ½ cups
5. Quinoa ¾ cup
6. Curry powder 1 ½ teaspoons
7. Salt ½ teaspoon
8. Black pepper ½ teaspoon
9. Cumin ½ teaspoon
10. Cinnamon ¼ teaspoon
11. Garbanzo beans, drained and rinsed 1 (14 ounce) can
12. Toasted pine nuts ½ cup
13. Raisins, soaked in hot water and drained (Optional) ½ cup

How to cook deliciously - Spiced Quinoa

1 . Stage

Heat olive oil in a saucepan over medium heat. Cook and stir onion and garlic in hot oil until onion is softened and translucent, about 5 minutes. Stir in stock, quinoa, curry powder, salt, pepper, cumin, and cinnamon; bring to a boil. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 20 minutes.

2 . Stage

Stir beans, pine nuts, and raisins into cooked quinoa. Serve warm or cold.
