1. Olive oil - 2 tablespoons
2. Onion, chopped - 1 medium
3. Minced garlic - 2 tablespoons
4. Ground beef - 1 pound
5. Cubed butternut squash - 1 pound
6. Frozen mixed vegetables - 1 (16 ounce) package
7. Diced tomatoes with green chile peppers - 2 (10 ounce) cans
8. Diced tomatoes - 1 (14.5 ounce) can
9. Chicken broth - 1 cup
10. Chipotle peppers in adobo sauce, chopped - 1 (7 ounce) can
11. Tomato paste - 1 (6 ounce) can
12. Chili powder - 1 tablespoon
13. Ground cumin - 1 tablespoon
14. Garlic powder - 1 teaspoon
15. Cayenne pepper, or to taste - ½ teaspoon
16. Brown sugar, or to taste - 1 tablespoon

How to cook deliciously - Spicy Butternut Squash Chili

1. Stage

Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until onion is translucent, about 5 minutes. Add beef and cook and stir until browned and crumbly, 5 to 7 minutes.

2. Stage

Transfer beef mixture to the bottom of a slow cooker and add butternut squash and frozen mixed vegetables. Stir in diced tomatoes with green chilies, diced tomatoes, chicken broth, chipotle peppers in adobo, tomato paste, chili powder, cumin, garlic powder, cayenne pepper, and brown sugar; mix together.

3. Stage

Set heat to High; wait to bring to a simmer. Cover, set heat to Low and cook, 8 hours to overnight.
