1. Great northern beans, rinsed and drained 1 (15.5 ounce) can
2. Fava beans, rinsed and drained 1 (15 ounce) can
3. Kalamata olives, pitted and halved 2 (5 ounce) jars
4. Cucumbers, seeded and chopped 4 medium
5. Carrots, shredded 2 medium
6. Sweet onion, thinly sliced ½ large
7. Fresh parsley, chopped 1 bunch
8. Cold lemon juice ½ cup
9. Olive oil ½ cup
10. Salt 1 ½ teaspoons
11. Ground black pepper ½ teaspoon
12. Crumbled feta cheese 1 (8 ounce) package

How to cook deliciously - Greek Cucumber Bean Salad

1 . Stage

Combine great northern beans, fava beans, Kalamata olives, cucumbers, carrots, onion, and parsley in a large salad bowl.

2 . Stage

Whisk lemon juice, olive oil, salt, and pepper together in a small glass measuring cup until it thickens slightly. Pour over the salad and mix well.

3 . Stage

Add feta cheese and toss to combine. Cover and refrigerate until flavors have blended, about 2 hours.
