1. Great northern beans, rinsed and drained - 1 (15.5 ounce) can
2. Fava beans, rinsed and drained - 1 (15 ounce) can
3. Kalamata olives, pitted and halved - 2 (5 ounce) jars
4. Cucumbers, seeded and chopped - 4 medium
5. Carrots, shredded - 2 medium
6. Sweet onion, thinly sliced - ½ large
7. Fresh parsley, chopped - 1 bunch
8. Cold lemon juice - ½ cup
9. Olive oil - ½ cup
10. Salt - 1 ½ teaspoons
11. Ground black pepper - ½ teaspoon
12. Crumbled feta cheese - 1 (8 ounce) package

How to cook deliciously - Greek Cucumber Bean Salad

1. Stage

Combine great northern beans, fava beans, Kalamata olives, cucumbers, carrots, onion, and parsley in a large salad bowl.

2. Stage

Whisk lemon juice, olive oil, salt, and pepper together in a small glass measuring cup until it thickens slightly. Pour over the salad and mix well.

3. Stage

Add feta cheese and toss to combine. Cover and refrigerate until flavors have blended, about 2 hours.
