2. Matchstick carrots - 1 (10 ounce) package
3. Jalapeno peppers, minced - 3 medium
4. Onion, chopped - 1 medium
5. Garlic, minced - 6 cloves
6. Ground cumin, or more to taste - 1 teaspoon
7. Cayenne pepper, or more to taste - 1 teaspoon
8. Chili powder, or more to taste - 1 teaspoon
9. Hot smoked paprika - 1 teaspoon
10. Vegetable broth - 2 ½ cups
11. Frozen diced butternut squash - 1 (16 ounce) package
12. Chickpeas, rinsed and drained - 1 (15 ounce) can
13. Fresh spinach - 1 (16 ounce) bag

How to cook deliciously - Spicy Vegetarian Stew

1. Stage

Heat olive oil in a stockpot over medium-high heat. Add carrots, jalapenos, onion, and garlic; cover and cook, stirring occasionally, until onions are translucent, about 4 minutes. Add cumin, cayenne, chili powder, and paprika; cook and stir for 1 minute.

2. Stage

Add vegetable broth, squash, and chickpeas; bring to a boil. Reduce heat and simmer, covered, until carrots are tender, about 10 minutes. Uncover and add spinach. Cook and stir until spinach is wilted, 5 to 7 minutes.
