Ingredients for - Spicy West African Sweet Potato Soup

1. Vegetable oil - 1 tablespoon
2. Onion, chopped - 1 medium
3. Garlic, minced - 4 cloves
4. Fresh ginger, minced - 1 (1/2 inch) piece
5. Ground cumin, or more to taste - ½ teaspoon
6. Ground turmeric - ½ teaspoon
7. Smoked paprika - ¼ teaspoon
8. Red pepper flakes - ¼ teaspoon
9. Sweet potatoes, peeled and diced - 5 medium
10. Petite diced tomatoes - 1 (14.5 ounce) can
11. Jalapeno pepper, seeded and minced - 1 medium
12. Vegetable broth, or as needed - 2 cups
13. Coconut milk - 1 (14 ounce) can
14. Peanut butter, or more to taste - ½ cup
15. Fresh spinach - 1 (10 ounce) package
16. Lime juice, or more to taste - 1 teaspoon

How to cook deliciously - Spicy West African Sweet Potato Soup

1. Stage

Heat oil in a stockpot over medium heat. Add onion and saute until translucent, about 5 minutes. Add garlic and ginger; cook until fragrant, about 1 minute. Add cumin, turmeric, paprika, and pepper flakes, then sweet potatoes, diced tomatoes, and jalapeno. Add enough broth to cover potatoes.

Cook until potatoes are tender, 15 to 30 minutes depending on how small you cut the potatoes. Add coconut milk and peanut butter; stir. Add spinach to the top; cover and steam until tender, 2 to 3 minutes.
