Ingredients for - Spinach and Mango Salad

1. Blanched slivered almonds ¾ cup
2. Red wine vinegar ¼ cup
3. Maple flavored balsamic vinegar 2 tablespoons
4. Olive oil 2 tablespoons
5. Dry mustard 2 teaspoons
6. Chopped fresh tarragon ¼ teaspoon
7. Salt and freshly ground black pepper to taste ¼ teaspoon
8. Fresh spinach - rinsed, dried and torn into bite size pieces 1 bunch
9. Mangos - peeled, seeded, and cubed 2

How to cook deliciously - Spinach and Mango Salad

1 . Stage

Preheat oven to 375 degrees F (190 degrees C).

2 . Stage

Arrange almonds in a single layer on a baking sheet. Bake 5 to 10 minutes, stirring occasionally, until fragrant and lightly toasted.

3 . Stage

In a small bowl, mix red wine vinegar, maple flavored balsamic vinegar, olive oil, dry mustard, tarragon, salt, and pepper.

4 . Stage

In a medium bowl, toss the red wine vinegar mixture with the spinach and mangos. Top with the toasted almonds.
