1. White sugar - ½ cup
2. Distilled white vinegar - ½ cup
3. Soy sauce - ¼ cup
4. Tamarind pulp - 2 tablespoons
5. Dried rice noodles - 1 (12 ounce) package
6. Vegetable oil - ½ cup
7. Minced garlic - 1 ½ teaspoons
8. Eggs - 4
9. Firm tofu, cut into 1/2 inch strips - 1 (12 ounce) package
10. White sugar - 1 ½ tablespoons
11. Salt - 1 ½ teaspoons
12. Ground peanuts - 1 ½ cups
13. Ground, dried oriental radish - 1 ½ teaspoons
14. Chopped fresh chives - ½ cup
15. Paprika - 1 tablespoon
16. Fresh bean sprouts - 2 cups
17. Lime, cut into wedges - 1

How to cook deliciously - Sukhothai Pad Thai

1. Stage

To prepare pad thai sauce: In a medium saucepan over medium heat, blend sugar, vinegar, soy sauce, and tamarind pulp.

2. Stage

To make pad thai: Soak rice noodles in cold water until soft; drain. In a large skillet or wok over medium heat, warm oil and add garlic and eggs; scramble eggs. Add tofu and stir until well mixed; add noodles and stir until cooked.

3. Stage

Stir in pad thai sauce, 1 1/2 tablespoons sugar, and 1 1/2 teaspoons salt. Stir in peanuts and ground radish. Remove from heat and add chives and paprika.

Serve with lime and bean sprouts on the side.
