1. White sugar ¾ cup
2. Vinegar ½ cup
3. Salt ½ teaspoon
4. Ground black pepper ½ teaspoon
5. Extra-virgin olive oil ¼ cup
6. Kale, stems removed and leaves chopped 1 bunch
7. Frozen shelled edamame (soybeans), thawed ½ (16 ounce) package
8. Red onion, sliced thin ¼
9. Shredded carrot 1 cup
10. Fresh blueberries ⅔ cup
11. Sweetened dried cranberries (such as Ocean Spray® Craisins®) ½ cup
12. Cashew pieces ½ cup
13. Shelled, roasted sunflower seeds ½ cup

How to cook deliciously - Super Summer Kale Salad

1 . Stage

Whisk sugar, vinegar, salt, pepper, and olive oil together in a bowl until sugar is dissolved; set aside.

2 . Stage

Toss kale, edamame, red onion, carrot, blueberries, dried cranberries, cashew pieces, and sunflower seeds together in a bowl. Pour about half the dressing over the mixture and toss to coat. Cover bowl with plastic wrap and refrigerate 4 to 6 hours. Serve remaining dressing on side.
