8. 1 teaspoon ground cinnamon -
9. 1/2 teaspoon baking soda -
10. 1/2 teaspoon salt -
11. 1/2 teaspoon ground allspice -
12. 1 cup chopped pecans -
13. 1 cup raisins -

How to cook deliciously - Sweet Potato Cookies

1. Stage

Preheat the oven to 375°F. In a large bowl, use a hand mixer or stand mixer to cream the butter and sugar until light and fluffy, five to seven minutes. Beat in the egg, sweet potato and vanilla until combined. Scrape down the sides and bottom of the bowl. In a separate bowl, whisk together the flour, baking powder, cinnamon, baking soda, salt and allspice. With your mixer on low, gradually add the dry mixture to the creamed mixture, and beat just until combined. Fold in the pecans and raisins.

Drop the cookie dough by tablespoonfuls 1 inch apart on ungreased baking sheets. Bake until the edges begin to brown, 10 to 12 minutes. Take the cookies out, and let them sit for one minute. Transfer the cookies to wire racks, and let cool to room temperature. Store in an airtight container.
