1. 1 tbsp. extra-virgin olive oil
2. Kosher salt
3. 1 lb. penne
4. 2 c. ricotta cheese
5. 2 large eggs, beaten
6. 2 c. shredded mozzarella, divided
7. 1/2 c. freshly grated Parmesan
8. 2 1/2 c. halved grape tomatoes
9. 1/4 c. freshly chopped basil, plus more for garnish
10. Freshly ground black pepper

How to cook deliciously - Three-Cheese Baked Penne with Tomatoes and Basil

1 . Stage

Preheat oven to 375° and grease a large baking dish with olive oil.

2 . Stage

In a large pot of salted boiling water, cook pasta according to package directions until al dente (about 10 minutes). Drain and return to pot.

3 . Stage

In a large bowl, whisk together ricotta and eggs, then add pasta, 1 cup mozzarella, Parmesan, tomatoes, and basil, and stir to combine. Season with salt and pepper.

4 . Stage

Pour pasta mixture into baking dish and cover with remaining 1 cup mozzarella cheese. Bake until cheese is bubbling and top is golden, 30 minutes.

Garnish with basil and serve.
