5. Chickpeas, drained - 1 (15 ounce) can
6. Diced tomatoes - 1 (14.5 ounce) can
7. Coconut milk - 1 (14 ounce) can
8. Sweet potato, cubed - 1
9. Garam masala - 1 tablespoon
10. Ground cumin - 1 teaspoon
11. Ground turmeric - 1 teaspoon
12. Salt - ½ teaspoon
13. Red chile flakes - ¼ teaspoon
14. Baby spinach - 1 cup

1. Stage

Heat oil in a skillet over medium heat. Cook onion, garlic, and ginger in hot oil until softened, about 5 minutes. Add chickpeas, tomatoes, coconut milk, and sweet potato. Bring to a boil, reduce heat to low, and simmer until tender, about 15 minutes.
