Ingredients for - Asian Snow Pea Toss

1. 1/4 cup orange marmalade
2. 1/4 cup seasoned rice vinegar
3. 2 tablespoons sesame oil
4. 4 teaspoons minced fresh gingerroot
5. 1 package (12 ounces) frozen shelled edamame
6. 1 pound fresh snow peas
7. 1 can (15 ounces) black beans, rinsed and drained
8. 1 small sweet red pepper, cut into thin strips
9. 3 green onions, chopped
10. 1 can (11 ounces) mandarin oranges, drained
11. 1/4 teaspoon salt
12. 1/4 teaspoon pepper

1 . Stage

In a small bowl, whisk the marmalade, vinegar, sesame oil and ginger.

2 . Stage

Cook edamame according to package directions, adding the snow peas during the last minute of cooking. Drain and rinse in cold water. Place in a large bowl. Stir in the black beans, red pepper and green onions. Add the marmalade mixture, mandarin oranges, salt and pepper; toss to coat.
