Ingredients for - Beef Flautas

1. Canola oil - 1 tablespoon
2. Boneless beef chuck roast, cut into chunks - 2 pounds
3. Tomatoes, chopped - 1 pound
4. Water - 4 cups
5. Onion, chopped - 1 medium
6. Jalapeno peppers, diced - 4 medium
7. Chopped fresh cilantro, divided - 1 cup
8. Garlic, smashed - 5 cloves
9. Ground cumin - 2 tablespoons
10. Salt and ground black pepper to taste - 2 tablespoons
11. Limes, juiced - 2 medium
12. Shredded Monterey Jack cheese - 1 cup
13. Flour tortillas, warmed - 12 (6 inch)

How to cook deliciously - Beef Flautas

1. Stage

Heat oil in a large Dutch oven or pot over medium heat. Add beef and saute, working in batches if needed, until browned, 5 to 7 minutes. Dotdash Meredith Food Studios

Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.

Remove beef from the pot, shred with 2 forks, and toss with remaining cilantro, lime juice, and more salt and pepper. Dotdash Meredith Food Studios

Take each tortilla and place 2 tablespoons of the shredded beef and some Monterey Jack cheese into it. Roll tightly and place on the prepared cookie sheet. Dotdash Meredith Food Studios
