1. 1/4 cup reduced-fat mayonnaise
2. 1/4 cup chopped celery
3. 2 green onions, chopped
4. 2 tablespoons sweet pickle relish
5. 1 tablespoon Dijon mustard
6. 1/4 teaspoon ground turmeric
7. 1/4 teaspoon salt
8. 1/8 teaspoon cayenne pepper
9. 1 package (12.3 ounces) silken firm tofu, cubed
10. 8 slices whole wheat bread
11. 4 lettuce leaves
12. Coarsely ground pepper, optional

1 . Stage

Mix first 8 ingredients; stir in tofu. Line 4 slices of bread with lettuce. Top with tofu mixture. If desired, sprinkle with pepper; close sandwiches.
