1. 1/4 cup reduced-fat mayonnaise -
2. 1/4 cup chopped celery -
3. 2 green onions, chopped -
4. 2 tablespoons sweet pickle relish -
5. 1 tablespoon Dijon mustard -
6. 1/4 teaspoon ground turmeric -
7. 1/4 teaspoon salt -
8. 1/8 teaspoon cayenne pepper -
9. 1 package (12.3 ounces) silken firm tofu, cubed -
10. 8 slices whole wheat bread -
11. 4 lettuce leaves -
12. Coarsely ground pepper, optional -

How to cook deliciously - Better than Egg Salad

1. Stage

Mix first 8 ingredients; stir in tofu. Line 4 slices of bread with lettuce. Top with tofu mixture. If desired, sprinkle with pepper; close sandwiches.
