1. Unsalted butter, at room temperature 1 stick
2. Brown sugar, or more to taste ½ cup
3. Blueberry skyr (such as Siggi's®) 1 (5.3 ounce) container
4. Eggs 2
5. Honey 1 ½ tablespoons
6. Large lemons, zested 2
7. All-purpose flour 2 cups
8. Baking powder 2 teaspoons
9. Baking soda ½ teaspoon
10. Salt ½ teaspoon
11. Frozen blueberries 1 ½ cups

1 . Stage

Preheat the oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.

Beat butter and sugar with an electric mixer until light and fluffy. Add eggs one at a time, beating well between each addition. Mix in blueberry yogurt, honey, and lemon zest.
