1. Brussels sprouts, trimmed and halved lengthwise 2 pounds
2. Bacon, or more to taste, thinly sliced 6 slices
3. Salt and ground black pepper to taste 1 pinch
4. Reduced balsamic vinegar, divided ⅔ cup

1 . Stage

Combine Brussels sprouts and bacon in a cast iron skillet; season with salt and pepper. Cook, stirring occasionally, until Brussels sprouts start to brown, 15 to 20 minutes. Drizzle 1/2 cup balsamic vinegar on top.

2 . Stage

Transfer Brussels sprouts and bacon to a serving platter; drizzle remaining balsamic vinegar on top.
