How to cook deliciously - Buckwheat pancakes with eggplant
1. Stage
Buckwheat grind in a coffee grinder into flour.

In the warm milk add the egg, salt, sugar, baking soda, vegetable oil. Beat well with a whisk.

Bake the eggplant on a gas stove (it will not take long), peel it, puree it in a blender. Add buckwheat flour and mashed eggplant to the milk.

Add finely chopped cilantro (if you don't like it, skip this step)

Bake the pancakes in a small pan on 2 sides, oiling the pan each time.

Serve the pancakes with sour cream or natural yogurt (I also add garlic, paprika, and herbs). Bon appetit!
