Ingredients for - Cheesy Mushroom Toast

1. 1 medium red onion: one half sliced; the other finely chopped -
2. 2 tbsp. vinegar, such as apple cider, red, or white wine -
3. Kosher salt -
4. 2 tbsp. butter -
5. 8 oz. oyster mushrooms, finely chopped -
6. 2 tsp. fresh thyme leaves, plus more for garnish -
7. Freshly ground black pepper -
8. 1 (15-oz.) can cannellini beans, rinsed and drained -
9. 4 thick slices bread, such as sourdough -
10. Sliced Swiss cheese  -

How to cook deliciously - Cheesy Mushroom Toast

1. Stage

Place the onion slices in a small bowl. Add vinegar and a pinch of salt, and toss to combine.

2. Stage

In a large skillet over medium heat, melt the butter. Add the mushrooms, chopped onions, and thyme, and season with salt and pepper. Cook, stirring occasionally, until mushrooms have lost most of their moisture, about 8 minutes. Remove from the heat and stir in the beans.

Preheat oven broiler to high. Place bread slices onto a sheet tray, and toast under broiler until lightly golden on both sides, about 1 to 2 minutes per side. (This can also be done in a toaster oven.)

Divide the bean mixture between toasts, spreading in an even layer. Cover each toast completely with slices of Swiss cheese. Broil until the cheese is melted and slightly golden, about 1 to 4 minutes depending on the strength of your broiler.

Serve topped with pickled onion slices and more fresh thyme leaves.
