Ingredients for - Cheesy Turkey Taco Bake

1. Non-stick cooking spray -
2. 3 tbsp. extra-virgin olive oil, divided -
3. 1 lb. ground turkey -
4. 3 tsp. low-sodium taco seasoning -
5. 1 white onion, finely chopped -
6. 1 jalapeño, seeded, finely chopped -
7. 1 orange bell pepper, seeded and cored, finely chopped -
8. 1/4 tsp. Freshly ground black pepper -
9. 1 (14.5-oz) can fire roasted tomatoes with chilies -
10. 1 (15.5-oz) can black beans, drained -
11. 9 oz. Velveeta, cut into 1/2” cubes -
12. 1/2 c. store-bought hot salsa -
13. 8  (6-in.) white corn tortillas -
14. 1 bunch cilantro, for garnish -
15. 1 jalapeño, thinly sliced, for serving -
16. 2 avocados, pitted and thinly sliced, for serving -
17. 1/4 c. sour cream, for serving -
18. 2 limes, cut into wedges -

How to cook deliciously - Cheesy Turkey Taco Bake

1. Stage

Preheat oven to 375° F and spray a 9-x-9” baking dish with non-stick cooking spray.

2. Stage

In a high-sided sauté pan over medium high heat, heat 2 tablespoons olive oil. Add ground turkey, breaking up the meat with a wooden spoon. Cook until no longer pink, about 5 minutes. Stir in taco seasoning mix, cook 1 minute. Using a slotted spoon, remove ground turkey to a plate.

3. Stage

In the same pan, add 1 tablespoon olive oil, onion, jalapeño, and bell pepper. Season with pepper and cook about 3-4 minutes. Add in roasted tomatoes and black beans and stir until combined. Stir in ground turkey. Check seasoning and remove from heat.

4. Stage

In a microwave safe bowl, add Velveeta and microwave on high for 1 minute. Remove from microwave and stir in salsa. Set aside until ready to build.

In the baking dish, add 4 tortillas. Next, add ½ of the turkey mixture and drizzle with ½ of the salsa mix. Add another layer of 4 tortillas, the remaining turkey mixture, and rest of the salsa and bake for 25 minutes.

Remove taco bake from oven and top with cilantro, jalapeño slices, avocado, and sour cream. Serve with lime wedges.
