1. Olive oil - 2 tablespoons
2. Ground cumin - 1 teaspoon
3. Chopped fresh cilantro - 2 tablespoons
4. Lime, juiced - 1
5. Salt and ground black pepper to taste - 1
6. Skinless, boneless chicken breast halves - cut into 1 inch cubes - 2
7. Zucchini, cut into 1/2-inch slices - 1 small
8. Onion, cut into wedges and separated - 1
9. Red bell pepper, cut into 1 inch pieces - 1
10. Cherry tomatoes - 10

How to cook deliciously - Chicken Kabobs Mexicana

1. Stage

In a shallow dish, mix together olive oil, cumin, chopped cilantro, and lime juice. Season with salt and pepper. Add chicken, and mix well. Cover, and refrigerate for at least one hour.

Preheat grill for high heat.

Thread chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers.
