Add the softened butter to the bowl of the blender and beat on maximum speed until light yellow. Add the sugar and continue to beat on high speed until the sugar has dissolved.

Sift flour and cocoa powder, add salt and instant dry yeast. Stir to combine.

Add the flour mixture to the butter mixture and knead the dough with the hook attachment on medium-high speed until the dough comes together and the sides of the bowl are clean. Continue to knead the dough for about 1 minute.

Transfer the waffle dough to a large bowl, cover with clingfilm and leave to rise for about 50-60 minutes. The dough should rise 1.5 times.

In the meantime, prepare the caramel sauce. (There are a lot of recipes for caramel sauce on the site, you can choose any). Grind cane or brown sugar in a coffee grinder to powder.

In a deep saucepan add the powdered sugar (you can also just sugar, but it will take longer to melt) and heat until the sugar is melted and has a nice brown color. I recommend that you refrain from stirring while the sugar is caramelizing.

Add the butter and salt. Stir well until a smooth, creamy texture is obtained. Pour the salted caramel sauce into a sauce pan. Store unused in the refrigerator.

Heat the butter in a skillet and fry the peeled and cut bananas. Then add the cane sugar, continuing to fry in the pan until caramelized. Turn off the heat and set aside.
