Ingredients for - Pork and Rice

1. 1 medium green pepper, chopped -
2. 1 small onion, chopped -
3. 2 tablespoons butter -
4. 1 can (14-1/2 ounces) diced tomatoes, drained -
5. 1 cup chicken broth -
6. 1/2 teaspoon salt -
7. 1/4 teaspoon pepper -
8. 1-3/4 cups cubed cooked pork -
9. 1 cup uncooked instant rice -
10. Optional: Lime wedges and minced cilantro -

How to cook deliciously - Pork and Rice

1. Stage

In a large skillet, saute the green pepper and onion in the butter until tender. Stir in the tomatoes, broth, salt and pepper. Bring the mixture to a boil, then stir in the pork and rice.

2. Stage

Preheat the oven to 350°F. Transfer the rice to a greased 2-quart baking dish. Cover the dish and bake it until the rice is tender and the liquid is absorbed, 20 to 25 minutes.

3. Stage

Before serving, give it a stir, and garnish each serving with a wedge of lime and a sprinkle of minced cilantro, if desired.
