1. 8 cups cubed seedless watermelon -
2. 2 English cucumbers, halved lengthwise and sliced -
3. 6 green onions, chopped -
4. 1/4 cup minced fresh mint -
5. 1/4 cup balsamic vinegar -
6. 1/4 cup olive oil -
7. 1/2 teaspoon salt -
8. 1/2 teaspoon pepper -

How to cook deliciously - Cucumber Watermelon Salad

1. Stage

In a large serving bowl, combine the watermelon, sliced cucumbers, green onions and mint.

In a small bowl, whisk the balsamic vinegar, olive oil, salt and pepper until the dressing is smooth. Pour the dressing over the salad and toss to coat. Serve the salad immediately, or cover and refrigerate it for up to two hours before serving, allowing the flavors to meld. If the salad has been refrigerated, give it a quick toss before serving.
