How to cook deliciously - Lemon Thyme Chicken

1. Stage

In a small bowl, combine flour, salt and pepper. Set aside 4-1/2 teaspoons for sauce. Sprinkle the remaining flour mixture over both sides of the chicken.

2. Stage

In a large nonstick skillet, heat the oil over medium heat. Add the chicken and cook until the juices run clear, about seven to nine minutes on each side. Remove the chicken from the skillet and keep it warm. Editor's Tip: Add a few lemon wedges to the skillet while cooking the chicken for an extra burst of flavor. This will infuse the chicken with even more citrusy goodness.

3. Stage

In the same skillet, melt the butter over medium-high heat. Add the onions and stir frequently until tender, about three to five minutes.

4. Stage

Stir in the dried thyme and the reserved flour mixture until blended. Gradually stir in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a boil and stir constantly until the sauce has thickened, about two minutes.

5. Stage

Serve the sauce over the cooked chicken breasts and sprinkle with fresh thyme.
