1. Coconut milk - 1 (14 ounce) can
2. Skinless, boneless chicken breast halves - 1 pound
3. Curry paste, or more to taste - 1 tablespoon
4. Frozen peas - ½ cup
5. Hot cooked rice - 2 cups
6. Chopped fresh basil, or to taste - 1 tablespoon
7. Chopped fresh cilantro, or to taste - 1 tablespoon

How to cook deliciously - Coconut-Curry Poached Chicken

1. Stage

Warm coconut milk in a large saucepan over medium heat. Add curry paste and stir to combine. Add chicken and cook for about 8 minutes. Add frozen peas; cook and stir until peas are heated through, and chicken is no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2. Stage

Serve with rice and garnish with basil and cilantro.
