1. Olive oil 1 tablespoon
2. Diced boneless chicken 2 pounds
3. Chopped onion ½ cup
4. Condensed cream of chicken soup 1 (10.5 ounce) can
5. Chopped green chile peppers 1 (7 ounce) can
6. Sour cream 1 cup
7. Milk ¼ cup
8. Ground cumin 1 tablespoon
9. Chili powder 1 tablespoon
10. Ground coriander (Optional) ½ teaspoon
11. Cayenne pepper (Optional) ½ teaspoon
12. Crushed red pepper flakes ½ teaspoon
13. Tortilla chips, or as needed 1 (14.5 ounce) package
14. Shredded Monterey Jack cheese 3 cups

How to cook deliciously - Easy Monterey Chicken Casserole

1 . Stage

Preheat the oven to 350 degrees F (175 degrees C).

2 . Stage

Heat oil in a skillet over medium heat. Add chicken and saute for about 5 minutes. Add onion and saute until softened, another 5 minutes. Stir in condensed soup, chile peppers, sour cream, milk, cumin, chili powder, coriander, cayenne pepper, and pepper flakes.

3 . Stage

Transfer 1/2 of the chicken mixture into a 9x13-inch pan. Layer with 1/2 of the tortilla chips and 1/2 of the Monterey Jack cheese. Repeat layers once more and cover with aluminum foil.

4 . Stage

Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes.
