1. Olive oil - 1 tablespoon
2. Diced boneless chicken - 2 pounds
3. Chopped onion - ½ cup
4. Condensed cream of chicken soup - 1 (10.5 ounce) can
5. Chopped green chile peppers - 1 (7 ounce) can
6. Sour cream - 1 cup
7. Milk - ¼ cup
8. Ground cumin - 1 tablespoon
9. Chili powder - 1 tablespoon
10. Ground coriander (Optional) - ½ teaspoon
11. Cayenne pepper (Optional) - ½ teaspoon
12. Crushed red pepper flakes - ½ teaspoon
13. Tortilla chips, or as needed - 1 (14.5 ounce) package
14. Shredded Monterey Jack cheese - 3 cups

How to cook deliciously - Easy Monterey Chicken Casserole

1. Stage

Preheat the oven to 350 degrees F (175 degrees C).

2. Stage

Heat oil in a skillet over medium heat. Add chicken and saute for about 5 minutes. Add onion and saute until softened, another 5 minutes. Stir in condensed soup, chile peppers, sour cream, milk, cumin, chili powder, coriander, cayenne pepper, and pepper flakes.

3. Stage

Transfer 1/2 of the chicken mixture into a 9x13-inch pan. Layer with 1/2 of the tortilla chips and 1/2 of the Monterey Jack cheese. Repeat layers once more and cover with aluminum foil.

4. Stage

Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes.
