1. Hot salsa - ¾ cup
2. Chunky peanut butter - ¼ cup
3. Light coconut milk - ¾ cup
4. Lime juice - 2 tablespoons
5. Soy sauce - 1 tablespoon
6. White sugar - 1 teaspoon
7. Grated fresh ginger - 2 tablespoons
8. Skinless chicken thighs - 2 pounds
9. Chopped peanuts, for topping - ½ cup
10. Chopped cilantro, for topping - 2 tablespoons

1. Stage

Combine salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar, and ginger in the slow cooker; mix well. Place chicken thighs in sauce; spoon sauce over chicken to coat.

2. Stage

Cover and cook on Low until chicken is very tender and sauce has thickened, 8 to 9 hours. A meat thermometer inserted into the thickest part of a thigh should read at least 165 degrees F (74 degrees C). Garnish with peanuts and cilantro before serving.
