Ingredients for - Fruited Wild Rice Salad

1. Dressing: -
2. 1/4 cup olive oil -
3. 1/3 cup orange juice -
4. 2 tablespoons honey -
5. Salad: -
6. 1 cup uncooked wild rice -
7. 2 Golden Delicious apples, chopped -
8. Juice of 1 lemon -
9. 1 cup golden raisins -
10. 1 cup seedless red grapes, halved -
11. 2 tablespoons each minced fresh mint, parsley and chives -
12. Salt and pepper to taste -
13. 1 cup pecan halves -

How to cook deliciously - Fruited Wild Rice Salad

1. Stage

Combine dressing ingredients; set aside. Cook rice according to package directions; drain if needed and allow to cool. In a large bowl, toss apples with lemon juice. Add raisins, grapes, mint, parsley, chives and rice. Add dressing and toss. Season with salt and pepper. Cover and chill several hours or overnight. Just before serving, add pecans and toss lightly.
