1. 2 skinless wild-salmon fillets -
2. Coarse salt -
3. Freshly ground black pepper -
4. 3 tbsp. extra-virgin olive oil -
5. 2 scallions -
6. 1 ruby red grapefruit -
7. 1 ripe avocado -
8. 2 c. sunflower shoots, watercress leaves, or a combination of both -
9. 1 tbsp. fresh lime juice -

How to cook deliciously - Grapefruit, Salmon, and Avocado Salad

1. Stage

Preheat the oven to 375 degrees F. Season the salmon with salt and pepper then place it in a 9-inch baking dish. Drizzle the fish with 1 tablespoon of oil and sprinkle it with half of the scallions. Bake until the salmon is partially opaque in the center, 10 to 12 minutes. Transfer the cooked salmon to a dish and let it cool.

2. Stage

Break the salmon into large pieces and divide it among the serving dishes. Top each dish with grapefruit, avocado, greens, and the remaining scallions. Season with salt and pepper. Whisk the remaining 2 tablespoons of oil with the lime juice and season with salt. Drizzle dressing over each salad.Looking for more healthy recipes?
