2. Unsalted butter - ¾ cup
3. Canola oil - ¾ cup
4. Bittersweet chocolate, finely chopped - 4 ½ ounces
5. All-purpose flour - 3 cups
6. White sugar - 3 cups
7. Unsweetened cocoa powder - ¾ cup
8. Baking soda - 2 ½ teaspoons
9. Salt - ½ teaspoon
10. Eggs, at room temperature - 3 large
11. Buttermilk, at room temperature - ¾ cup
12. Pure vanilla extract - 2 teaspoons

1. Stage

Preheat the oven to 350 degrees F (175 degrees C). Line two 12-cup muffin tins with paper liners.

Combine water, butter, oil, and chocolate in a large saucepan. Heat over medium heat until melted and fully combined.

Whisk flour, sugar, cocoa, baking soda, and salt together in a large bowl. Pour in hot chocolate mixture and whisk until combined. Whisk in eggs, one at a time. Whisk in buttermilk and vanilla extract.
