4. Celery stalk, diced 1
5. Carrot, diced 1 medium
6. Onion, chopped 1 small
7. Fresh cauliflower florets ½ cup
8. Salt ½ cup
9. Pimento-stuffed green olives, chopped 1 (5 ounce) jar
10. Garlic, finely chopped 2 cloves
11. Dried oregano 1 tablespoon
12. Red pepper flakes 1 teaspoon
13. Black pepper ½ teaspoon
14. White vinegar 1 cup
15. Olive oil 1 cup

1 . Stage

Place green and red peppers, jalapeños, celery, carrots, onion, and cauliflower in a large bowl. Stir in salt, then fill with enough cold water to cover. Place plastic wrap or aluminum foil over the bowl; refrigerate for 8 hours to overnight.

Drain salty water; rinse vegetables and set aside.
