2. Kosher salt -
3. Freshly ground black pepper -
4. Vegetable oil -
5. 1 tbsp. butter -
6. 1 tbsp. extra-virgin olive oil -

How to cook deliciously - How To Cook Scallops

1. Stage

Heat grill to medium-high. Coat grill grates with vegetable oil. Blot scallops dry with paper towels, then season generously with salt and pepper. 

2. Stage

Grill, covered, 3 to 4 minutes without disturbing. Flip and grill uncovered, until opaque throughout, 1 to 2 minutes more.

Transfer to a serving platter and drizzle with olive oil and serve with lemon wedges.

In large skillet over medium-high heat, melt butter with oil. Blot scallops dry with paper towels, then season generously with salt and pepper.

When foaming of mixture has subdued, and the pan is just starting to smoke, add scallops. Cook, undisturbed, until bottom has developed a golden crust, 2 to 3 minutes. Flip and cook until golden on other side, 2 to 3 minutes more. 

6. Stage

Transfer to a serving platter and drizzle with olive oil and serve with lemon wedges.
