1. Olive oil - 1 tablespoon
2. Butter - 1 tablespoon
3. Onion, halved and thinly sliced - 1 large
4. Garlic, thinly sliced - 4 cloves
5. Fresh thyme, leaves stripped - 2 sprigs
6. Bay leaves - 2
7. Chopped tomatoes - 2 (14 ounce) cans
8. Vegetable broth - 1 cup
9. Brown sugar - 1 tablespoon
10. Molasses - 1 tablespoon
11. Liquid smoke flavoring - 1 tablespoon
12. Collard greens, chopped - 2 pounds
13. Cooked white beans (Optional) - 1 ½ cups

How to cook deliciously - Kickin' Vegetarian Collard Greens

1. Stage

Heat olive oil and butter in a large pot over medium heat until butter melts and starts to brown, 1 to 2 minutes. Add onion and garlic; cook and stir until onion turns translucent, about 5 minutes. Stir in thyme and bay leaves.

Pour chopped tomatoes, vegetable broth, brown sugar, molasses, and liquid smoke into the pot; bring to a simmer. Stir in collard greens gently. Reduce heat to low and simmer, covered, until tender, about 30 minutes.
