1. Roasting potatoes, cut into cubes 2 large
2. Sweet potato, peeled and cut into cubes 1 large
3. Brown onion, quartered 1 large
4. Fresh mushrooms 1 ½ cups
5. Parsnip, peeled and cut into cubes 1
6. Carrots, peeled and cut into cubes 1
7. Olive oil ¼ cup
8. Balsamic Vinegar 3 tablespoons
9. Chopped fresh rosemary 3 tablespoons
10. Chopped fresh thyme 2 tablespoons
11. Salt and freshly ground black pepper to taste 2 tablespoons

How to cook deliciously - Kiwi-Roast Vegetable Mix

1 . Stage

Preheat an oven to 475 degrees F (245 degrees C).

2 . Stage

Mix roasting potatoes, sweet potato, brown onion, mushrooms, parsnip, and carrots in a large bowl.

3 . Stage

Whisk olive oil, vinegar, rosemary, thyme, salt, and pepper together in a small bowl; drizzle over the vegetable mixture and toss to coat. Spread vegetables into a large roasting pan.

4 . Stage

Roast in preheated oven, turning every 10 minutes, until the vegetables are completely tender, 35 to 40 minutes. Season again with salt and pepper as desired.
