Ingredients for - Leek and Potato Soup with Shrimp

1. Butter ¼ cup
2. Leeks, chopped 2 medium
3. Onion, chopped 1 large
4. Swanson® Chicken Broth 1 (32 ounce) carton
5. Russet potatoes, peeled and cut into 1/2-inch dice 3 medium
6. Curry powder 1 teaspoon
7. Salt and pepper to taste 1 teaspoon
8. Milk 1 cup
9. Cooked shrimp, peeled, diced 1 pound

How to cook deliciously - Leek and Potato Soup with Shrimp

1 . Stage

Melt butter in a large pot over medium heat. Stir in chopped leeks and onions; cook slowly until softened, 5 to 7 minutes.

2 . Stage

Stir in Swanson® Chicken Broth; add potatoes. Season with curry powder; add salt and pepper to taste. Bring to a boil, then reduce temperature to low. Simmer 20 minutes.

3 . Stage

Stir in milk; add shrimp. Heat until soup just starts to simmer again.
