Ingredients for - Leek and Potato Soup with Shrimp

1. Butter - ¼ cup
2. Leeks, chopped - 2 medium
3. Onion, chopped - 1 large
4. Swanson® Chicken Broth - 1 (32 ounce) carton
5. Russet potatoes, peeled and cut into 1/2-inch dice - 3 medium
6. Curry powder - 1 teaspoon
7. Salt and pepper to taste - 1 teaspoon
8. Milk - 1 cup
9. Cooked shrimp, peeled, diced - 1 pound

How to cook deliciously - Leek and Potato Soup with Shrimp

1. Stage

Melt butter in a large pot over medium heat. Stir in chopped leeks and onions; cook slowly until softened, 5 to 7 minutes.

2. Stage

Stir in Swanson® Chicken Broth; add potatoes. Season with curry powder; add salt and pepper to taste. Bring to a boil, then reduce temperature to low. Simmer 20 minutes.

3. Stage

Stir in milk; add shrimp. Heat until soup just starts to simmer again.
