1. Sweet Italian pork sausage, cut into 1/2-inch slices - ½ pound
2. Onion, chopped - 1 large
3. Celery, finely chopped - 1 stalk
4. Chopped garlic - 1 tablespoon
5. Water - 8 cups
6. Chicken broth - 2 (14.5 ounce) cans
7. Diced tomatoes - 1 (28 ounce) can
8. Dry lentils, rinsed - 1 (16 ounce) package
9. Shredded carrot - 1 cup
10. Garlic powder - 1 tablespoon
11. Chopped fresh parsley - 1 tablespoon
12. Salt, or to taste - 1 tablespoon
13. Black pepper - ½ teaspoon
14. Dried oregano - ½ teaspoon
15. Dried thyme - ¼ teaspoon
16. Dried basil - ¼ teaspoon
17. Bay leaves - 2 large
18. Ditalini pasta (Optional) - ½ pound

How to cook deliciously - Lentil and Sausage Soup

1. Stage

Cook sausage in a large pot over medium-high heat until evenly brown, 7 to 10 minutes. Add onion, celery, and garlic; sauté until tender and translucent, about 5 minutes. Stir in water, chicken broth, tomatoes, lentils, carrot, garlic powder, parsley, salt, pepper, oregano, thyme, basil, and bay leaves; bring to a boil. Reduce the heat, cover, and simmer until lentils are tender, 2 1/2 to 3 hours.

Stir in pasta and cook until tender, 15 to 20 minutes. Remove bay leaves before serving.
