Ingredients for - John's Chili

1. Olive oil - 1 tablespoon
2. Red bell pepper, finely chopped - 1
3. Yellow bell pepper, finely chopped - 1
4. Green bell pepper, finely chopped - 1
5. Orange bell pepper, finely chopped - 1
6. Red onion, finely chopped - 1 large
7. Celery, chopped - 1 stalk
8. Ground pork - 2 pounds
9. Ground beef - 2 pounds
10. Serrano chile peppers, diced - 8
11. Diced tomatoes - 3 (14.5 ounce) cans
12. Diced green chile peppers - 1 (4.5 ounce) can
13. Tomato paste - 3 (6 ounce) cans
14. Kidney beans - 2 (15 ounce) cans
15. Minced garlic - 6 tablespoons
16. Key lime juice - 1 fluid ounce
17. Tequila - 4 fluid ounces
18. Beer - 16 fluid ounces
19. Chili powder - 2 ½ tablespoons
20. Salt and pepper to taste - 2 ½ tablespoons

How to cook deliciously - John's Chili

1. Stage

Heat the olive oil in a large pot over medium heat. Stir in the red bell pepper, yellow bell pepper, green bell pepper, orange bell pepper, onion, and celery. Cook until tender. Place pork and beef in the pot, and cook until evenly brown. Drain grease.

2. Stage

Mix serrano chile peppers, diced tomatoes, green chile peppers, tomato paste, kidney beans, garlic, lime juice, tequila, and beer into the pot. Season with chili powder, salt, and pepper. Bring to a boil. Reduce heat to medium-low, and simmer 5 hours.
